Taco Soup

This is a really easy, and super tasty one-pot dinner I usually make when I’m rushed for time, or am too tired to try and do anything fancy. The recipe originally came from my mother-in-law but I made some adjustments that my wife and I seem to enjoy more.

 

The original recipe called for ground turkey. We’ve experimented with several different meats each time we made it. In addition to the ground turkey, we’ve also tried ground beef, chicken breast, and chicken thighs.

 

All of them taste great, and it’s really up to you as to which one you want to use. I just like it better with shredded chicken thighs.

 

I boil the thighs then hand shred them. Then I throw everything in my pressure cooker and let it roll for about 20 minutes.

 

You DO NOT need a pressure cooker to make this! A stovetop pot will work just fine. Just cook whatever meat you’re going to use, drain it, then throw everything in a pot and heat it till its hot!

 

Its really low cost too for the amount it makes. We can easily get 3 meals out of it between the two of us.

 

If you do like me, and buy your meat in bulk, it’s cheaper, so lets break down the prices:

 

– Meat: $3.00 

– Beans: $2.00

– Corn: $1.00

– Rotel: $1.25

– Diced Tomatoes: $1.00

– Taco Seasoning: $0.50

– Cheese: $1.00

 

It’s super simple, super tasty, and about $1.50 per serving!

Cost: About $1.50 a serving

Ingredients

  • 1 Pound Whatever meat you want - shredded chicken, ground beef, ground turkey - your call
  • 1 Can Rotel Diced Tomatoes & Green Chilies Whatever spiciness you like
  • 1 Can Yellow Corn
  • 1 Can Black Beans
  • 1 Can Dark Red Kidney Beans
  • 1 Can Diced Tomatoes
  • 2 Tbsp Taco Seasoning (One packet)
  • 1 bag Shredded Cheese

Instructions

  • Cook and drain your meat.
  • Combine all ingredients (do not drain the cans)
  • Heat until hot
  • Serve topped with cheese

Notes

You can use whatever meat you prefer. I boil and shred chicken thighs when I make it, but you do you. Just drain the meat before combining it with the other ingredients.
